Original Recipe Yield One 8-inch Cake
Ingredients:
- 4 oz. fine-quality bittersweet chocolate
- 1 stick unsalted butter
- 3/4 cup granulated Stevia
- 3 large eggs
- 1/2 cup unsweetened cocoa powder plus additional for sprinkling
Directions:
- Preheat oven to 375 F. Butter an 8-inch round baking pan.
- Chop chocolate into small pieces.
- In a double boiler or glass bowl, set over a saucepan of slowly simmering water. Add chocolate and butter and stir together until fully melted and smooth.
- Remove top of double boiler or bowl from heat and whisk sugar substitute into chocolate mixture.
- Add eggs and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined.
- Pour batter into pan and bake in middle rack of oven for 25 minutes or until the top has formed a thin crust.
- Remove cake and cool on a rack for 10 minutes. Turn upside down and onto a serving plate.
- Dust cake with additional cocoa powder.
